East meets West dinner: Gang Kua and Elotes!

For no special reason, other than that Mary brought home some fresh corn-on-the-cob and a bunch of organic Chinese water spinach today, I decided to build an international dinner with the spinach wilted in a gang kua Thai red curry with tofu, and to convert the corn cobs into Mexico City-style grilled-corn elotes in honor of the great version we had the other night at Mussel & Burger Bar in Louisville.  Both came out just fine, and we'll full and happy.
